Grilled chicken is a timeless favorite, but with the right marinade, it becomes something truly memorable.
This marinade recipe balances sweetness, heat, and acidity to create a rich, slightly spicy flavor that caramelizes beautifully on the grill.
Ingredients:
1/4 cup olive oil
3 tbsp honey
3 tbsp soy sauce
2 garlic cloves, finely grated
1 red chili, finely chopped (adjust to taste)
1 tsp smoked paprika
1 tsp ground cumin
Juice of 1 lime
1 tsp fresh grated ginger
Salt & black pepper to taste
Instructions:
Mix all ingredients in a bowl. Add the chicken and coat thoroughly. Let marinate for at least 2 hours, preferably overnight in the refrigerator. Grill over medium heat until fully cooked and nicely caramelized.
Drink pairing:
This marinade’s balance of sweetness, acidity, and gentle heat pairs beautifully with a crisp white wine like Sauvignon Blanc or a slightly off-dry Riesling. The acidity enhances the lime and chili, while a touch of sweetness softens the spice. For a non-alcoholic option, try a chilled lemonade or peach iced tea.
