Ingredients (Serves 4)

  • 600 g cod, skrei cod, or pollock
  • 1 tsp salt
  • 1 small leek
  • 2–3 carrots (approx. 200 g)
  • 2 parsnip (approx. 200 g)
  • 2–3 potatoes
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1 can crushed tomatoes (approx. 400 g)
  • 1½ dl dry white wine
  • 6 dl water
  • 2 fish bouillon cubes
  • 1/2 dl finely chopped dill. (the amount of Dill is highly personal and if you use fresh or frozen Dill. Use your common sense)
  • 200 g shrimp, mussels, or crayfish tails (It works fine with only Cod, if you dont whant this)
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Salt and freshly ground pepper

Instructions

  1. Prepare the fish:

    • Cut the fish into pieces.
    • Sprinkle with 1 tsp of salt and set aside.

  2. Prepare the vegetables:

    • Clean and slice the leek, carrots, and parsnip.
    • Peel and dice the potatoes.

  3. Cook the vegetables:

    • Sauté the leek, carrots, parsnip, and potatoes in olive oil together with the minced or pressed garlic.

  4. Cook the Soup/Stew:

    • Add the crushed tomatoes, wine, water, and fish bouillon cubes.
    • Cook for 10–15 minutes with the lid on until the vegetables start to soften.

  5. Add the fish:

    • Add the fish pieces and let simmer for a few minutes with the lid on.
    • Add the seafood (shrimp, mussels, or crayfish tails) just before the fish is done so they warm through without becoming tough.
    • Season with salt and pepper.
    • Stir in the finely chopped dill.

  6. Flavor with lemon:

    • Squeeze in the juice of one lemon and add the lemon zest just before serving for a fresh and tangy touch.
