Looking for a quick, healthy and protein-packed alternative to traditional bread rolls? These cottage cheese rolls – inspired by the popular Swedish keso frallor – are easy to make, require no yeast, and are ready in under 30 minutes.

Ingredients (makes about 6 rolls):
250 g cottage cheese (any fat content)
2 eggs
2 dl rolled oats
1 dl whole wheat flour (or replace with more oats for gluten-free version)
1 tsp baking powder
0.5 tsp salt
(Optional: 1 tbsp chia seeds or flaxseeds for extra fiber)
Instructions:
Preheat oven to 200°C (390°F).
Mix all ingredients in a bowl. For a smoother texture, blend briefly with a hand mixer – or stir by hand for a more rustic result.
Let the mixture sit for 5–10 minutes to thicken slightly.
Spoon out six even portions onto a baking sheet lined with parchment paper.
Bake in the middle of the oven for 20–25 minutes, until golden and firm.
Let cool slightly – then enjoy! Delicious with butter, avocado, cheese, or just on their own.
