Looking for a quick, healthy and protein-packed alternative to traditional bread rolls? These cottage cheese rolls – inspired by the popular Swedish keso frallor – are easy to make, require no yeast, and are ready in under 30 minutes.

Whether you're eating low-carb, adding more protein to your diet, or just want a tasty homemade roll for breakfast or snack time, this recipe has you covered.


Ingredients (makes about 6 rolls):

  • 250 g cottage cheese (any fat content)

  • 2 eggs

  • 2 dl rolled oats

  • 1 dl whole wheat flour (or replace with more oats for gluten-free version)

  • 1 tsp baking powder

  • 0.5 tsp salt

  • (Optional: 1 tbsp chia seeds or flaxseeds for extra fiber)


Instructions:

  1. Preheat oven to 200°C (390°F).

  2. Mix all ingredients in a bowl. For a smoother texture, blend briefly with a hand mixer – or stir by hand for a more rustic result.

  3. Let the mixture sit for 5–10 minutes to thicken slightly.

  4. Spoon out six even portions onto a baking sheet lined with parchment paper.

  5. Bake in the middle of the oven for 20–25 minutes, until golden and firm.

Let cool slightly – then enjoy! Delicious with butter, avocado, cheese, or just on their own.
