1 eggplant

1 zucchini

1 red bell pepper

1 yellow bell pepper

1 yellow onion

2 garlic cloves

400 g (about 14 oz) crushed tomatoes

1 tsp dried thyme

Fresh basil to serve

Salt and pepper to taste
Instructions:

Dice the eggplant, zucchini, and peppers. Finely chop the onion and garlic.
