Spaghetti Bolognese: A Classic Pasta Dish for Any Dinner

Spaghetti bolognese is one of the world’s most loved pasta dishes. It is simple, comforting and perfect for both everyday dinners and relaxed weekend meals. The secret to a really good bolognese is time. Let the vegetables soften slowly, brown the meat properly and allow the sauce to simmer until the flavours become deep, rich and well balanced.

This version is easy to cook at home, but still has the flavour and structure of a proper slow-cooked meat sauce.

Ingredients

Serves 4

400 g spaghetti
500 g minced beef or mixed minced meat
1 yellow onion
2 garlic cloves
1 carrot
1 celery stalk
2 tbsp tomato paste
400 g crushed tomatoes
100 ml red wine, water or beef stock
100 ml milk
1 bay leaf
1 tsp dried thyme or oregano
Olive oil for frying
Salt and black pepper
Freshly grated parmesan, for serving
Fresh basil or parsley, optional

How to Make Spaghetti Bolognese

Finely chop the onion, garlic, carrot and celery.

Heat olive oil in a large pan or pot. Add the onion, carrot and celery and cook over medium heat for 5–8 minutes, until the vegetables soften. They should not burn, but slowly release sweetness and flavour.

Add the garlic and cook for another minute.

Add the minced meat and brown it well. Let the meat get some colour before stirring too much. This gives the sauce more depth and a richer flavour.

Stir in the tomato paste and let it cook for 1–2 minutes. This removes the raw tomato flavour and gives the sauce a deeper taste.

Pour in the red wine, water or beef stock and let it reduce slightly.

Add the crushed tomatoes, bay leaf, thyme or oregano, salt and black pepper. Lower the heat and let the sauce simmer for at least 45 minutes. If you have time, let it cook for 1–2 hours for a richer result. Stir occasionally.

Add the milk towards the end and let the sauce simmer for a few more minutes. The milk softens the acidity from the tomatoes and gives the bolognese a rounder flavour.

Cook the spaghetti in plenty of salted water according to the package instructions. Save a little pasta water before draining.

Mix the pasta with the bolognese sauce. Add a splash of pasta water if needed to help the sauce coat the spaghetti.

Serve with freshly grated parmesan and fresh herbs.

Chef’s Tips for a Better Bolognese

Let the sauce simmer slowly. A bolognese almost always tastes better after at least one hour on low heat.

Brown the meat properly. This gives the sauce more flavour than simply cooking the meat in the liquid.

Cook the tomato paste before adding the liquid. It creates a deeper, more rounded flavour.

Use pasta water. The starch helps the sauce cling to the pasta.

For a more traditional Italian-style serving, try the sauce with tagliatelle or pappardelle instead of spaghetti. Wider pasta holds the meat sauce especially well.

For a non-alcoholic option, choose a drink with freshness rather than sweetness. Non-alcoholic red wine with good acidity, red grape must or a dry apple must can all work well.

Avoid very sweet soft drinks, as they can overpower the tomato sauce and make the dish feel heavier.

Beer Pairing
