Somali sambusas are crispy triangular pastries filled with beautifully seasoned meat, onions and spices. They are one of Somalia’s most popular snacks and are especially loved during Ramadan, when they are commonly served at iftar to break the fast.
A Short History of Sambusas
Sambusas belong to a much older family of filled pastries found across the Middle East, Central Asia, South Asia and East Africa. Early versions were known by names such as sanbusaj and sanbusa, with roots stretching back to medieval Persian and Arab cooking.
Through centuries of trade and cultural exchange across the Red Sea and Indian Ocean, different versions developed throughout the region. In Somalia, the sambusa became its own much-loved tradition, typically filled with spiced minced meat, onions and fresh herbs. Today, it is a classic part of Somali home cooking and an essential treat during Ramadan.
Easy Somali Sambusa Recipe
Makes approximately 15–20 sambusas
Ingredients
For the filling:
500 g ground beef
1 large onion, finely chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground cardamom
½ teaspoon black pepper
1 teaspoon salt
1 small handful fresh coriander, chopped
1–2 green chillies, finely chopped (optional)
1 tablespoon vegetable oil
For assembling:
15–20 sambusa or spring roll pastry sheets
2 tablespoons flour
3 tablespoons water
Vegetable oil for frying
Method
1. Prepare the filling
Heat one tablespoon of oil in a frying pan over medium heat. Add the onion and cook until soft.
Add the garlic, cumin, coriander, cardamom and black pepper. Stir for about 30 seconds until fragrant.
Add the ground beef and cook while breaking it apart with a wooden spoon. Continue cooking until the meat is browned and most of the liquid has evaporated.
Season with salt and stir in the fresh coriander and chilli. Remove from the heat and allow the filling to cool completely.
2. Make the flour paste
Mix the flour and water in a small bowl until you have a thick, smooth paste. This will act as the glue that seals the sambusas.
3. Fold the sambusas
Place a pastry sheet in front of you and fold it into a triangular pocket.
Add approximately one tablespoon of filling, then continue folding into a triangle. Brush a little flour paste onto the final edge and press firmly to seal.
Repeat until all the filling has been used.
4. Fry until golden
Heat vegetable oil in a deep frying pan or saucepan to approximately 175°C.
Fry the sambusas in small batches for around 2–3 minutes, turning when necessary, until crisp and golden brown.
Remove with a slotted spoon and place on kitchen paper to drain.
How to Serve Somali Sambusas
Serve the sambusas hot and crispy. They are delicious on their own, but you can also serve them with fresh lime, chilli sauce or a simple coriander and yoghurt dip.
They work beautifully as a snack, starter or part of a larger meal – preferably enjoyed around a table with good company.
