Ingredients (Serves 4):
For the Panna Cotta
- 500 ml (2 cups) heavy cream
- 1 vanilla pod (or 1 tsp vanilla paste)

- 2 gelatin sheets
- 1 tsp ground cinnamon
- 1/2 tsp ground cardamom
- Zest of 1 orange
For the Orange Jelly
- 200 ml (3/4 cup) freshly squeezed orange juice
- 2 gelatin sheets
- 1 tbsp granulated sugar (optional, depending on the sweetness of the oranges)
For Decoration
- Candied orange peel
- A sprinkle of cinnamon
- Pomegranate seeds for color and freshness
Instructions:
1. Prepare the Panna Cotta:
- Soak the gelatin sheets in cold water for at least 5 minutes.
- In a saucepan, combine the cream, sugar, cinnamon, and cardamom. Split the vanilla pod lengthwise, scrape out the seeds, and add both the seeds and the pod to the saucepan. Stir in the orange zest.
- Heat the mixture gently over medium heat, stirring continuously, until it’s just about to simmer. Remove from heat.
- Squeeze excess water out of the gelatin sheets and stir them into the warm cream mixture until fully dissolved.
- Pour the mixture into serving glasses or molds. Let them cool to room temperature before refrigerating for at least 4 hours, or until set.
2. Make the Orange Jelly:
- Soak the gelatin sheets in cold water for 5 minutes.
- Warm the orange juice in a small saucepan over low heat. Add sugar if desired.
- Squeeze out the water from the gelatin sheets and stir them into the warm orange juice until dissolved.
- Allow the mixture to cool to room temperature. Carefully pour it over the set panna cotta layers, then refrigerate for another 1–2 hours until the jelly is firm.
3. Decorate and Serve:
- Garnish with candied orange peel, a light dusting of cinnamon, and a few pomegranate seeds for a festive pop of color.
