Ingredients

  • 0.75 dl olive oil

  2. Cut the peppers in half and remove the seeds. Peel the onion and cut it into halves. Cut the garlic bulb in half crosswise so the cloves are exposed.

  3. Place the peppers, onion, garlic, and tomato in a baking dish or on a tray. Drizzle with a little olive oil and roast until the vegetables are soft and lightly charred.

  4. Let the vegetables cool slightly, then squeeze the roasted garlic cloves out of their skins.

  5. Blend the peppers, onion, garlic, tomato, and almonds into a smooth sauce.

  6. Add the olive oil, sherry vinegar, smoked paprika, cayenne pepper, and salt. Blend until you reach your preferred consistency.

  7. Taste and adjust with more vinegar for extra acidity or more olive oil for a softer texture.
