This crispy roasted cauliflower is packed with flavor, easy to make, and perfect as a side dish or a delicious snack. It turns beautifully golden and crunchy on the outside while remaining tender on the inside.

Ingredients

  • 1 large head of cauliflower
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika (preferably smoked)
  • ½ tsp onion powder
  • ½ tsp chili flakes (optional for heat)
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 tbsp panko breadcrumbs (for extra crispiness)
  • 2 tbsp grated parmesan (optional but adds great flavor)

Instructions

  1. Prepare the cauliflower

    • Preheat the oven to 220°C (425°F)

    • Cut the cauliflower into small florets. The smaller the pieces, the crispier they get.

  2. Season the cauliflower

    • Place the florets in a large bowl.

    • Drizzle with olive oil and toss to coat evenly.

    • Sprinkle over garlic powder, paprika, onion powder, chili flakes, salt, and black pepper.

    • Add the panko breadcrumbs and parmesan for extra crunch and flavor. Toss everything together.

  3. Roast in the oven

    • Spread the cauliflower out on a baking sheet lined with parchment paper in a single layer.

    • Roast in the middle of the oven for 20–25 minutes, or until golden brown and crispy.

    • Flip the florets halfway through for even roasting.

  4. Serve and enjoy

    • Remove from the oven and let cool for a few minutes.

    • Garnish with extra parmesan or freshly chopped parsley if desired.

    • Serve with a dip of your choice, such as garlic aioli, sriracha mayo, or yogurt dressing.

  • Use the convection (fan) setting if available, as it helps create a crispier texture.

  • Spread out the cauliflower on the baking sheet to prevent steaming.

  • Place the baking sheet higher in the oven for a crispier, golden finish.
