Recipe: Classic Ratatouille
This colorful and flavorful vegetable stew is as delicious warm as it is cold – ideal for summer dinners and outdoor gatherings.
Ingredients (serves 4–6):

1 eggplant 
- 
1 zucchini 
- 
1 red bell pepper 
- 
1 yellow bell pepper 
- 
1 yellow onion 
- 
2 garlic cloves 
- 
400 g (about 14 oz) crushed tomatoes 
- 
2 tbsp olive oil 
- 
1 tsp dried thyme 
- 
Fresh basil to serve 
- 
Salt and pepper to taste 
Instructions:

Dice the eggplant, zucchini, and peppers. Finely chop the onion and garlic.

Sauté the onion and garlic in olive oil until soft. 
- 
Add the eggplant first and let it cook for a few minutes before adding the zucchini and peppers.

Pour in the crushed tomatoes, add thyme, salt, and pepper. Let simmer for 25–30 minutes until the vegetables are tender and flavors well blended.
