  • Optional: zest from one lemon for extra flavor

Instructions:

  1. Prepare the Simple Syrup: In a saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar is completely dissolved. Once dissolved, remove the saucepan from the heat and allow the simple syrup to cool completely.

  2. Blend the Watermelon: Place the watermelon cubes in a blender and blend until smooth. Strain the watermelon puree through a fine mesh sieve to remove any pulp, ensuring a smooth sorbet.

  3. Mix All Ingredients: In a large bowl, combine the cooled simple syrup, strained watermelon puree, sparkling wine, and lemon juice. If you want an extra citrusy kick, add some finely grated lemon zest.

  4. Freeze: If you have an ice cream maker, pour the mixture into it and churn according to the manufacturer’s instructions until the sorbet is smooth and frozen. If you don’t have an ice cream maker, pour the mixture into a shallow dish and place it in the freezer.
