Recipe for Hähnchenbrust in Sahnesoße

Ingredients (Serves 4)

  • 4 chicken breasts
  • 2 tbsp butter or olive oil
  • 1 small yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 200 ml (about ¾ cup) chicken stock
  • 300 ml (1¼ cups) heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp lemon juice
  • 1 tsp dried thyme (or fresh thyme for extra flavor)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper.
  2. Cook the chicken: Heat the butter or olive oil in a large skillet over medium heat. Sear the chicken breasts for about 4–5 minutes per side until golden brown. Remove and set aside.
  3. Make the sauce: In the same pan, sauté the chopped onion until soft and translucent (about 2–3 minutes). Add the minced garlic and cook for another minute.
  4. Add the liquids: Pour in the chicken stock and bring to a boil. Reduce the heat and stir in the cream, Dijon mustard, lemon juice, and thyme. Season with salt and pepper.
  5. Simmer: Return the chicken breasts to the skillet. Let the sauce simmer on low heat for 10–15 minutes, or until the chicken is cooked through and the sauce has slightly thickened.
  6. Garnish and serve: Sprinkle with freshly chopped parsley before serving.
