This recipe came together one weekend when I wanted to quickly make pancakes for my son. I wanted something that felt a little more filling than regular pancakes, with more eggs, less flour and some oats in the batter.
It is not a recipe that needs exact measurements. The most important thing is the texture of the batter. It should be slightly thick, but still runny enough to pour into the pan and cook like pancakes.

Recipe: Filling Pancakes with Apple and Oats
Ingredients
3 eggs
about 300 ml milk
about 120 g plain flour
about 40 g rolled oats or fibre oats
1/2 apple
a pinch of salt
butter for frying
1 banana

How to Make Them
Add the eggs, milk, flour, oats, apple and salt to a bowl.
Blend everything with a hand blender until the batter is fairly smooth.
Look at the consistency rather than the exact measurements. The batter should be slightly thicker than a classic pancake batter, but still pourable. It should spread in the pan without becoming too heavy or compact.
If the batter feels too thick, add a little more milk.
If the batter feels too thin, add a little more flour or oats.
Fry the pancakes in butter over medium heat.
When the pancake starts to set, add sliced banana to one half.
Fold the pancake over and let the banana warm up inside.
Serve straight away with Skogens Honung Drinking Chocolate drizzled on top.
