This soft, melt-in-your-mouth fudge combines rich caramel flavor with smooth white chocolate and a touch of sea salt on top.

Ingredients (makes about 30 pieces)
300 ml (1 ¼ cups) heavy cream
250 ml (1 cup + 2 tbsp) granulated sugar
100 ml (about ⅓ cup + 1 tbsp) light syrup (e.g. golden syrup or corn syrup)
2 tsp vanilla sugar (or 1 tsp vanilla extract)
100 g (3.5 oz) white chocolate, chopped
50 g (3.5 tbsp) butter
1 tsp sea salt or flaky salt + extra for topping
Instructions
Prepare the pan: Line a square baking dish (about 20x20 cm / 8x8 inches) with parchment paper.
Make the caramel base: In a heavy-bottomed saucepan, combine cream, sugar, syrup, and vanilla. Bring to a gentle boil over medium heat, stirring occasionally.
Boil to 120°C (248°F): Let the mixture boil until it reaches 120°C (use a candy thermometer). Then remove from heat.
Add chocolate and butter: Stir in chopped white chocolate, butter, and 1 tsp sea salt. Mix until smooth and lump-free.
Pour and top: Pour the fudge into the prepared pan and sprinkle a little extra flaky salt on top.
Chill and cut: Let it cool completely in the fridge (at least 2–3 hours), then cut into squares and enjoy!
