Perfect for the holidays or as a thoughtful homemade gift!

Ingredients (makes about 30 pieces)

  • 300 ml (1 ¼ cups) heavy cream

  • 250 ml (1 cup + 2 tbsp) granulated sugar

  • 100 ml (about ⅓ cup + 1 tbsp) light syrup (e.g. golden syrup or corn syrup)

  • 2 tsp vanilla sugar (or 1 tsp vanilla extract)

  • 100 g (3.5 oz) white chocolate, chopped

  • 50 g (3.5 tbsp) butter

  • 1 tsp sea salt or flaky salt + extra for topping

Instructions

  1. Prepare the pan: Line a square baking dish (about 20x20 cm / 8x8 inches) with parchment paper.

  2. Make the caramel base: In a heavy-bottomed saucepan, combine cream, sugar, syrup, and vanilla. Bring to a gentle boil over medium heat, stirring occasionally.

  3. Boil to 120°C (248°F): Let the mixture boil until it reaches 120°C (use a candy thermometer). Then remove from heat.

  4. Add chocolate and butter: Stir in chopped white chocolate, butter, and 1 tsp sea salt. Mix until smooth and lump-free.

  5. Pour and top: Pour the fudge into the prepared pan and sprinkle a little extra flaky salt on top.

  6. Chill and cut: Let it cool completely in the fridge (at least 2–3 hours), then cut into squares and enjoy!
