Ingredients (4 servings)

  • 500 g (1 lb) carrots (preferably in different colors)
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp fresh or dried thyme
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat the oven: Set your oven to 200°C (400°F) and line a baking sheet with parchment paper.

  2. Prepare the carrots: Peel and cut the carrots into sticks, rounds, or wedges—whichever you prefer.

  3. Season the carrots: Place them on the baking sheet and drizzle with olive oil and honey. Sprinkle with thyme, salt, and pepper, then toss everything together to coat evenly.

  4. Roast in the oven: Bake for about 25–30 minutes, or until the carrots are tender and have a nice golden color. Flip them halfway through for even roasting.

  5. Serve and enjoy: Let the carrots cool slightly before serving. For extra flavor, top them with toasted nuts, crumbled feta cheese, or a dollop of yogurt.

Tips & Variations

- Swap thyme for rosemary or tarragon for a different flavor twist.

- For extra caramelization, increase the temperature to 225°C (430°F) for the last five minutes.

- Serve with a lemon-garlic yogurt sauce for a fresh and tangy contrast.
