Kladdkaka is one of the most beloved cakes in Sweden. With its gooey texture, rich chocolate flavor, and simple method, it has become a true classic at the coffee table. It resembles a chocolate fondant, but is even easier to make at home.

The secret lies in the baking time – the cake should remain soft and sticky in the center, with a slightly crisp surface. Serve with whipped cream, vanilla ice cream, or fresh berries.

Did you know…

Kladdkaka became popular in Sweden during the 1970s and has since become a staple in homes and cafés. It is so loved that it even has its own day – Kladdkakans dag – celebrated every year on November 7th.

Basic recipe for Kladdkaka

Ingredients:

  • 100 g butter

  • 2.5 dl sugar

  • 2 eggs

  • 1.5 dl all-purpose flour

  • 3 tbsp cocoa powder

  • 1 tsp vanilla sugar (or extract)

  • A pinch of salt

Instructions:

  1. Preheat the oven to 175 °C (350 °F).

  2. Melt the butter in a saucepan.

  3. Stir in the sugar and eggs – mix gently without whisking too much.

  4. Add flour, cocoa, vanilla, and salt. Stir until smooth.

  5. Pour the batter into a greased and floured baking tin, about 22 cm (9 inches) in diameter.

  6. Bake for 15–20 minutes. The cake should be soft and gooey in the center.

  7. Allow to cool slightly before serving.

Flavor variations to try

  • Licorice and raspberry – add licorice powder to the batter and top with fresh raspberries.

  • Browned butter and sea salt – brown the butter for a nutty, caramel-like flavor and sprinkle with sea salt.

  • Chili and lime – a bold twist combining heat and freshness.

  • Coffee and cardamom – deeper chocolate flavor with a spiced note.

  • White chocolate and blueberries – a creamier and lighter version with fruity balance.

Drink pairing ideas

The intense chocolate flavor pairs beautifully with drinks that balance sweetness. A glass of dessert wine, such as port or a sweet Italian red, is a classic choice. For a non-alcoholic option, strong coffee or a spiced chai is the perfect match.

Kladdkaka is simple, quick, and versatile – a Swedish classic that always delights.
