Ingredients (1 drink)
1.5 oz (45 ml) gin (or vodka)
0.75 oz (20 ml) elderflower liqueur
0.75 oz (20 ml) freshly squeezed lemon juice
0.25 oz (10 ml) simple syrup (optional, to taste)
3–3.5 oz (90–100 ml) sparkling wine (Prosecco, Cava, or Crémant)
1–1.5 oz (30–45 ml) soda water
Thin cucumber slices
Mint or lemon balm

How to make it
Fill a large wine glass with ice.
Add gin, elderflower liqueur, and lemon juice. Add simple syrup if you prefer a slightly rounder sweetness.
Stir briefly to chill.
Top with sparkling wine and a splash of soda water.
Garnish with cucumber slices and a sprig of mint or lemon balm.
