Spruce tips, the soft, light-green shoots that emerge on spruce trees in spring, are a hidden treasure of the forest. These tender tips have a unique, fresh flavor with hints of citrus and pine, making them perfect for cooking and crafting beverages. Making your own spruce tip liqueur is not only simple but also a way to preserve the freshness of spring in a bottle.

What Are Spruce Tips?

Spruce tips are the new growth on spruce trees that appear for a short period in late spring or early summer. They are both tender and flavorful, with a subtle sweetness and a distinctive forest aroma. In addition to being delicious, spruce tips are rich in vitamin C and have traditionally been used as an ingredient in natural remedies.

How to Make Spruce Tip Liqueur

Making spruce tip liqueur is a creative and rewarding process where the flavors of the forest blend with sweetness and alcohol. Follow this simple recipe:

Ingredients:

  • 2–3 dl (about 1 cup) freshly picked spruce tips
  • 4 dl (1 ¾ cups) sugar
  • 5 dl (2 cups) neutral spirit (like vodka or grain alcohol)
  • Optional: a slice of lemon or orange for added freshness

Instructions:

  1. Pick the spruce tips
Collect tender, light-green spruce tips from trees in a clean forest area. Be gentle and avoid taking too much from a single tree to allow it to continue growing.

  2. Prepare the ingredients
Rinse the spruce tips to remove dirt or small insects. Let them dry slightly before use.

  3. Layer in a jar
Alternate layers of spruce tips and sugar in a sterilized glass jar. The sugar will help draw out the flavors from the spruce tips and form a syrup.

  4. Add the alcohol
Pour the alcohol over the mixture until everything is covered. For an extra fresh twist, you can add a thin slice of lemon or orange.

  5. Let it steep
Seal the jar and store it in a dark, cool place for 4–6 weeks. Shake the jar occasionally to help the sugar dissolve.

  6. Strain and store
Once the liqueur has steeped, strain out the spruce tips and pour the clear liquid into a clean bottle. Let it mature for a few more weeks to fully develop its flavors.

Taste and Uses

The finished spruce tip liqueur has a beautiful golden hue and a delightful balance of freshness and sweetness. Serve it chilled as an aperitif, enjoy it as an after-dinner digestif, or use it as a creative ingredient in cocktails. It’s also perfect drizzled over ice cream or other desserts.

Respect for Nature

Always pick spruce tips responsibly and with respect for nature. Take only what you need and make sure to check local regulations regarding harvesting in your area.
