Homemade iced tea is simple, fresh and easy to adapt. By using real tea, fresh fruit, herbs and citrus, you get a drink that feels more balanced and elegant than many ready-made alternatives.

1. Lemon Iced Tea with Mint
A classic iced tea with black tea, lemon and mint. Fresh, slightly sharp and perfect for lunch, picnics or grilled food.
Ingredients
1 litre water
3 black tea bags, such as Earl Grey or English Breakfast
1 lemon
2–3 tbsp honey or simple syrup
1 handful fresh mint
Ice
Method
Bring the water to a boil and let the tea steep for 4–5 minutes.
Remove the tea bags and stir in honey or simple syrup while the tea is still warm.
Leave to cool, then chill in the fridge.
Squeeze in the juice from half the lemon and slice the rest.
Serve with plenty of ice, lemon slices and fresh mint.
Alcoholic Version
Add 40–50 ml gin per glass for a fresh cocktail with clear citrus notes.
For a lighter version, top with prosecco or dry sparkling wine.

2. Green Iced Tea with Peach and Basil

1 litre water
3 green tea bags
2 ripe peaches
1–2 tbsp honey or simple syrup
Fresh basil
Ice
Method
Heat the water to around 80°C. Green tea can become bitter if the water is too hot.
Let the tea steep for 2–3 minutes, then remove the tea bags.
Stir in honey or simple syrup and leave to cool.
Slice the peaches and add them to a jug with fresh basil.
Pour over the tea and chill for at least one hour.
Serve with ice and extra peach slices.
Alcoholic Version
Add 40 ml light rum or vodka per glass.
For a more elegant summer drink, top with dry sparkling wine.

3. Rooibos Iced Tea with Strawberry and Lime

Ingredients
1 litre water
3 rooibos tea bags
200 ml strawberries
1 lime
1–2 tbsp honey, agave syrup or simple syrup
Ice
Method
Bring the water to a boil and let the rooibos tea steep for 5–7 minutes.
Remove the tea bags and stir in the sweetener while the tea is still warm.
Leave to cool completely.
Slice the strawberries and lime.
Add the fruit to a jug and pour over the tea.
Chill for at least one hour and serve with plenty of ice.
Alcoholic Version
Add 40 ml white rum per glass for a soft and berry-led cocktail.
You can also top it with cava or prosecco for a lighter, sparkling version.

Tips for Better Iced Tea
